Moretto Catering by SMG Meeting was founded in Brescia as a catering and banqueting service to satisfy the most demanding palates. It is an excellent service for events, conference catering, business dinners, mass catering, private parties and weddings. It was established at the Milan Expo in 2015, where there were gala dinners, lunch services and coffee breaks satisfying even the most demanding guests.

Ever since the establishment of the first cooking centre in Brescia, our catering service has become increasingly international: we are in fact part of the multinational Studio Moretto Group and our presence on a global scale allows us to bring to the table a taste of different cultures, as well as having the the honour of serving the local specialities of both Brescian cuisine and that of other Italian regions: we can spoil your guests by offering the best Italian cuisine or, if you prefer, the exceptional, exotic culinary delicacies of foreign countries where we work every day … all in the picturesque setting of Brescia, Lake Garda, Lake Iseo and many other fascinating places that characterise the so-called “Lioness of Italy”. THE TYPICAL BRESCIAN FOOD AND DRINK OFFERED BY OUR CATERING SERVICE

The catering company Moretto Catering by SMG Meeting was founded in Brescia and here it established its first cooking centre, consisting of a large kitchen: this is the so-called ” taste and flavour factory”, where talented and passionate cooks prepare delicious dishes every day to please the most demanding of guests. The proximity of the Brescia cooking centre means that we are able to quickly serve the province with a zero kilometre approach.

As a Brescian company, we are proud to offer the specialities of this region, rich in history and tradition, on our menus. It is a highly structured food and drink service, with strong flavours that reflect our agricultural past as well as the hard work carried out in the Brescian valleys…the Brescian diet is undoubtedly calorific but is altogether really tasty, with lots of ancient influences. In order to get an idea of what typical Brescian dishes are like, below are some timeless dishes (for more information, simply contact our catering team and we will be happy to help you!):

  • Spiedo: traditionally, Brescians describe this dish in their dialect as spet and is usually eaten together with others at lunch or dinner. Do not confuse this dish with the famous Bergamascan polenta e osei because a traditional Brescian might be offended! Instead, think of it as a mix of pieces of beef, pork, game and other small birds on long, metal skewers that cook slowly for hours, rotating constantly and soaked in butter (if following the version from Val Trompia) or in oil (for the version from Val Sabbia). The result of all of this preparation, which delights our catering team, is the combination of tender meat with a tasty crispy outside, served with roast potatoes or polenta and then coupled with local red wines.
  • Manzo all’olio: originating in the Brescian city of Rovato, it is a dish of meat cut into thin slices and covered with its own juices. Our catering team recommends serving it with polenta and a glass of red wine. The secret of this dish, already recognised by la Denominazione Comunale lies with the choice of young and lean beef, sliced to form pockets, which are then stuffed with anchovies and chopped vegetables. Everything is then covered in flour, fried and simmered with white wine until reduced. Finally, it is then boiled in lots of water, making the meat really tender, and is then covered with its own thick juices.
  • Casoncelli: Recognised by la Denominazione Comunale, our catering service wants to honour this speciality, originating from two Brescian towns, Barbariga and Longhena, which consists of small pockets of fresh egg pasta, stuffed with finely chopped prosciutto, parmesan and nutmeg, and then seasoned with butter and sage. Casoncelli are known as casonsei and it is a hugely appreciated dish amongst Brescians, due to its delightful taste that even your guests will surely appreciate in our catering service when accompanied by a glass of good red wine.
  • Bossolà: This is a large doughnut usually eaten by children during the Christmas period in Brescia. It is soft and covered with icing sugar, very simple in taste but traditionally accompanied with mascarpone, custard or chocolate. Our catering team suggest that you serve this dessert with a sweet, ice-cold, sparkling wine.
  • Baked tench: This is a typical fish dish from the Brescian town, Clusane. Its residents are hugely proud of this particular fish, which can be found in Lake Iseo. Tench is cooked in the oven in butter, breadcrumbs and spices, and then flavoured with oil and butter. Our catering team suggests a side dish of polenta and baked potatoes, as well as a glass of dry, white wine.

The fairytale locations in the province of Brescia are the ideal settings to enjoy a spot of lunch or dinner, with some dishes not always necessarily based on Brescian cuisine. For those who want to embark on a culinary journey, the catering team at SMG Meeting offer a kaleidoscope of dishes from other Italian regions, those of an international standard and the best of all: gourmet specialities from other countries.

As our objective is to promote cultural diversity through various culinary experiences, we will be happy to introduce you to the best feature of our catering service: the gourmet cuisine from foreign countries. In Brescia, we are finally able to introduce you to the new elements of exotic culture and fusion that, until today, have only been a feature of the haute cuisine, reserved for trendy establishments in capital cities all over the world. Our catering team is part of the multinational Studio Moretto Group. This exposure to other cultures around the world allows us to communicate and collaborate with international chefs, and also try new foods. However, most importantly, there is the possibility, even nowadays in Brescia, of taking part in cultivating and producing rare, ingredients by directly working the land in other countries and bringing back to your table the fruit of such a meaningful and unique experience.

This group will be coordinated by an event manager from our administrative office, who will act as your exclusive port of call.
